Mary’s Gone Crackers Review and Giveaway

by Jessie on August 31, 2010

I have been a huge fan of Mary’s Gone Crackers ever since I tried the original crackers a few years back. It was something about their nutty flavor and addictive crunch that got me hooked on the gluten-free crackers from day one. Since then, Mary’s has been coming out with some interesting new products that I have seen popping up around the blog world lately. You can imagine that I was thrilled when Jennifer of Mary’s Gone Crackers agreed to send me a few complimentary samples of these new products.

Apparently I was not the only one excited to try Mary’s Gone Crackers. As soon as I opened the box, Lil’ Buddy hopped in and claimed one of the individually wrapped cookies. He loves anything with a crinkly wrapper! Once I pried Little away from my box of goodies, I was able to do some tasting. :)

The thing I was looking forward to trying the most was the Sticks and Twigs, which is basically the Mary’s version of pretzel sticks. Calling these pretzels would be doing them a disservice since they taste SO much better than any pretzel I have ever tried.

In addition to the Sea Salt flavor, I got to try a small sample bag of the curry variety and I really loved them.  I will definitely be hunting down a full-sized bag next time I’m at Whole Foods.

The best part about these tasty snacks is that they are actually really good for you. Not only are Mary’s Gone Crackers vegan and gluten-free, they are full of healthy ingredients such as flax, quinoa, chia seeds, and amaranth. If you love the original Mary’s crackers, you will probably love these too. They taste pretty similar but are super crunchy, and of course, in the shape of sticks and twigs. I even found a J in the mix!

Although the star of the show was the curry flavored Sticks and Twigs, I also got to sample their new love Cookies.

At first bite, these cookies definitely had a “healthy” taste. After a couple of bites, I began to enjoy the hearty, natural flavor of these cookies.  I tried the Gingersnap and the N’Oatmeal flavors, and while both of them tasted pretty good, the texture was a little too dense for me. I don’t have much experience with gluten-free cookies so it is difficult for me to judge these fairly. All things considered, I enjoyed the cookies, but I probably wouldn’t buy them at the store. I am more of a home-baked cookie person anyway!

Mary’s Gone Crackers Giveaway:

One lucky winner will receive three full-sized Mary’s Gone Crackers products, which will include the Sea Salt Sticks and Twigs, Original Crackers, and Chocolate Chip love Cookies. That’s a lot of vegan, gluten-free goodness right there. To enter, all you have to do is leave a comment! You can also earn more entries by either tweeting about the giveaway, mentioning it on your blog (if you have one), or “liking” my facebook page. Just be sure to come back here and leave a comment for each thing you do!

The winner will be randomly chosen and announced one week from today, on September 7th. Good luck! :)

Something Out of Nothing

by Jessie on August 24, 2010

When I first started a blog a couple of years ago, it was called Something Out of Nothing. At the time my family and friends were my only readers and I have gone through two complete blog changes since then. The concept of the blog, which was to make do with whatever ingredients I had on hand, is still something I practice today. Yesterday’s dinner was no exception, as I searched the fridge for ingredients and made a “something out of nothing” meal. Here’s a list of what I had to work with:

  • half a package of tempeh
  • about 1/2 carton of wilting spinach
  • 2 tomatoes
  • a small piece of yellow squash
  • about 7 button mushrooms
  • 1/3 of a jar of pasta sauce
  • 2/3 of a large white onion
  • 1 box of whole wheat spaghetti
  • a generous amount of Garlic Gold

With the exception of the spaghetti and Garlic Gold, all of the ingredients were in desperate need of being used up before they went bad. Whenever this happens, I usually make a big pot of pasta, as I am convinced you can do no wrong with veggies, tomato sauce, and garlic. For me a meal like this is one of the easiest ways to make “something out of nothing”.

To start, I cooked the spaghetti, drained it, tossed it with a bit of Garlic Gold oil, and set it aside. While the pasta was cooking, I cut up all of my veggies and tempeh, and sauteed everything in a bit of olive oil until the veggies were tender. I seasoned the veggies and tempeh with salt, pepper, and some dried Italian herbs. Then I added the sauce, stirred it all together, and let it cook for a few minutes. I added about a tablespoon of garlic nuggets in oil (sorry, but I’m obsessed with the stuff) and tossed the veggie sauce mixture into the spaghetti. Dinner was served.

I do realize that this is not the prettiest meal I have ever made, but that’s what I get for using whole wheat spinach pasta and a bunch of random ingredients. I assure you, it was delicious and healthy, and that’s what matters the most to me!

What is your go-to meal when you want to use up what’s in the fridge?

In other news, I am excited to announce that the TofuXpress is now available in my OpenSky shop! Ever since I got one of these I have not been able to stop making all kinds of tofu dishes. If you have ever wished that tofu wasn’t so spongy, you will probably be interested in the TofuXpress. It really works wonders for the texture! For more information, click here. :)

My Chicago Experience

by Jessie on August 18, 2010

Over the past weekend I went to Chicago for the second annual Healthy Living Summit. I really had plans to recap every event and detail of the summit, but I have since decided not to do so. Many of my new blog friends (check out Erin, Dorry, or Candice to name a few) have written great recaps and play-by-play posts of the event if you want to check them out.  The weekend went by so fast, I could hardly keep up with everything that went on, let alone blog about it. However, I can still share my experience in the photo recap below.

For me, my time in Chicago wasn’t about sessions, or sponsors, or even free swag.

It wasn’t about staying in a creepy haunted hotel that resembled something out of a Ghostbusters movie.

It wasn’t about passing out business cards and networking (although I did my fair share of this).

Instead, my short trip to Chicago was all about meeting new friends.

It was about feeling like a member of a special group.

It was about savoring fresh, delicious food.

It was about sharing stories, ideas, and thoughts with like-minded people

It was about taking morning walks in the park.

It was about exploring a new and beautiful city.

It was about enjoying interesting sights, amazing architecture, and unique art.

It was about having my roommate take countless photos of me in front of different landmarks. :)

It was about bonding over a sweaty and challenging yoga session in a fancy studio.

It was about chatting over chana masala, naan, and chutney.

It was about so much more!

My trip was practically over before it began, but even with less than 2 days in Chicago, I still managed to do all of these wonderful things. The Healthy Living Summit was a great experience for me and I definitely look forward to attending in future years. The speakers were informative and engaging, the sponsors were generous, and the swag was plentiful. But as I mentioned, I didn’t attend this event for any of these things. I went to Chicago to meet fellow bloggers and readers, to make connections, and to experience the diversity and uniqueness of the blogging community that I am proud to be a part of.

Many thanks to Kath, Tina, Meghann, Heather, and Caitlin for organizing and putting together such a memorable event. Now I am inspired to attend future blogging events and conferences such as FitBloggin, Blogalicious, and next year’s HLS. I think I have a new addiction!

Also, thanks to Erin, Heather, Gina, Nichole, and Arnold and Orowheat for letting me steal some of your photos for this post. :)

If you attended the Healthy Living Summit, what was your favorite part? If you didn’t attend, what are some your experiences with meeting fellow bloggers? I want to hear about it!

Also, if you were at HLS and want a great follow-up to Nicole’s photography class, check out my post on photo editing here.

Online Photo Editing Tutorial, Part 1

by Jessie on August 13, 2010

Before we get started on the tutorial, I just wanted to mention that I added a Shop tab to the top of my header, so you can see everything I have in my OpenSky shop without leaving this site.  In case anyone is interested, I added my Bodum french press to the shop as well. It makes really delicious coffee! If you are interested in purchasing anything, don’t forget to take advantage of the 25% off by using the code EXCITE25. It expires August 16th!

Now on to the tutorial. First I want to say that I know very little about photography. I use a point-and-shoot camera on automatic setting to take the majority of my photos. For the most part, I just do what I think looks good from various trial and error over the years. As long as I take the picture in natural light, and use the macro setting with a pretty steady hand, my pictures tend to turn out well. When I discovered Picnik.com, I began taking my pictures to the next level and making them look even better.

For those who don’t know, Picnik is a free online photo editing site which I use to do all of the editing for my blog photos. To take full advantage of the site, you have to sign up for a free account, but there is also a premium one which has a small annual fee and offers more features. For the past year, I have been using the free one and I haven’t really felt the need to pay for premium, but that is completely up to you. Before continuing with my tutorial, you may want to click over to Picnik and have a look around first. If not, please keep reading!

The first step is to select a photo from your computer and upload it into Picnik.

Here is what the screen will look like once you upload a photo:

Your can see there are many options available in the menu at the top. The first thing I always do is the Auto-Fix, which is basically Picnik’s quick fix to make your photo look better.

If you are happy with that, you can stop there, but I always go a few more steps. Next, I re-size the photo so it fits my blog better. Usually your camera settings will determine the size of your photos, so you may or may not need to re-size them. Picnik will automatically adjust the ratios for you, unless you select otherwise.

Here is the same photo, only made smaller:

If I am going to crop the photo, I will usually do so after re-sizing it. Cropping is great for focusing on certain parts of the photo that you want to highlight or cutting out aspects of it that you don’t like.

Each photo is different, so I usually play around a few times before I decide on the look I am going for.  Since I take most of my photos outside, they tend to come out overexposed at times, so I usually adjust the exposure and contrast, under the Exposure tab.

The Exposure section also has an Auto-Fix button if you want to use it, but I like to adjust it myself with the slider buttons until I am happy with the result. In the picture above, I changed the exposure to -5 and the contrast to 2 since I liked the way it looked. You can tell I know nothing about real photo editing, and basically let Picnic and my eyes do the work for me. I love being able to change the look of my photos without getting too technical! :)

Next, I adjust the temperature and saturation under the Colors tab. I use the sliders in the same way I did the exposure, until I am satisfied with the result.

I usually go ahead and adjust the sharpness by a tiny bit too.

The good thing about Picnik is that it is very user-friendly and includes instructions and tips as you go along. Even if you are total photo-editing idiot such as myself, you can still create some really beautiful photos!

So are you ready for the before and after? Here you go:

Which one looks more appetizing to you? The changes are very subtle, but I think the editing makes a big difference in the quality of the photo. It only takes a few minutes too! Here are some other examples of photos I have edited on Picnik.

Not just food photos either!

And once you are done with all of your edits, you can save the photo to your computer and it is yours forever. How cool is that? Be sure to check out Picnik and start experimenting with photo editing. After all, you can always revert back to the original so no harm is done. :)

Was this tutorial helpful? Everything I just showed was under the Edit section of Picnik. We haven’t even started to explore the super fun Create section!  I am going to do a series showing all kinds of other amazing stuff you can do with Picnik, this was only the first! Is there anything you would like to learn about? Perhaps making your own blog header or banner from a photo? Let me know!

My latest snack find is way too delicious not to share. It was inspired by the lovely Pure2Raw twins, Lori and Michelle. When I won a tofu press in Tasha’s blog giveaway, I was completely overjoyed. I am so lazy when it comes to pressing tofu, and I hate to admit that most of the time I don’t even do it. Now I have no excuse! The TofuXpress is a pretty interesting gadget that squeezes most of [...]

Chunky Mango Gazpacho

July 19, 2010

Nothing says summer like a big bowl of cold, refreshing gazpacho. This tropical version contains ripe mangos and lots of cilantro to give it a sweet and savory flavor all in the same bite. To me, the key to the recipe is fresh cilantro, but if you don’t like it you could probably substitute basil [...]
